Egg Muffin Cups:
Crack 18 eggs in a bowl. Add 1/4 c. water or milk. Season to taste. I use salt, pepper, paprika, season salt, and celery salt. Add mushrooms, frozen spinach, tomatoes, ham, shredded cheese or whatever you prefer. Bake in the oven at 350° until eggs are set.

Almost-from-Scratch Chocolate Chip Banana Bread Recipe
1 box yellow cake mix
1- 3.4 oz box of vanilla pudding
3 large bananas
¾ c. water
4 eggs
1/3 c. oil
1 ¼ c. mini chocolate chips (or just throw the whole 10 oz. bag in!)

Preheat oven to 300°
Whisk dry ingredients, (cake mix and pudding) together.
Puree bananas with water.
Put wet and dry together.
Add eggs and oil.
Mix on low one minute. Scrape sides down and mix on low another minute.
Mix in chocolate chips. (Feel free to “bread” your chocolate chips in 2 tbsp. of flour to keep them from sinking.)
Divide batter between two greased loaf pans.
Bake @ 300°F for 1- 1 ¼ hours. Check with a toothpick that it comes out clean.
Allow to cool for 15 minutes then remove from pans.
I love to eat this slightly warm. Freeze leftovers and pull out for a quick dessert!
